You might want to start with a more recent stable version, e.g. v1.0.19, or the latest version, v1.5.0.

You may be blocking the event dispatch thread. Instead, pace the animation using a javax.swing.Timer, as shown here, or a javax.swing.SwingWorker, as shown here.

Use a suitable org.jfree.chart.plot.Marker for the threshold. Override your chosen renderer's getItemPaint() method to alter the color dynamically.

No; display the chart and then update the moving average TimeSeries in the valueProperty handler of your Task<TimeSeries>.

Look at implementations of Dataset that manage a collection of Series. For example, an XYSeriesCollection "Represents a collection of XYSeries objects that can be used as a dataset."

On the relevant axis,

1. Invoke the setRange() method to include the desired values.
2. Invoke the setNumberFormatOverride() method with a suitable java.text.NumberFormat.
3. Invoke the setDateFormatOverride() method with a suitable java.text.DateFormat.

In the approach shown here, the axes have a common range and the enclosing container's preferred dimensions have a common length.
